Notes: Tonight’s dinner was supposed to be a meatloaf, but I forgot to prep it the night before or in the morning so I ended up having to throw together a hash. It ended up be quite tasty! And made me feel more confident with keeping on track with my eating when I’m fixing a last minute dinner.
Breakfast: Three eggs
Snack: One handful of roasted, lightly salted almonds
Lunch: Antipasti plate with salami, cucumber, mozzarella, kalamata olives, and cherry tomatoes
Snack 2: Trail mix with peanuts, sunflower seeds, and dried fruit
Dinner: A small handful of raw baby carrots (not pictured), sausage/potato/onion/mushroom hash, and two eggs
Dessert: One Siggi’s coconut yogurt and three strawberries
